Watermelon Waffles!

Not one to give up on summer… just because school is back in session, need I remind you summer is still officially with us until September 22nd!  So if you are like me, bask in the warm days and savor a good sweat knowing the snow will be here all too soon! I found this watermelon waffles recipe at Random Thoughts of a Supermom a while back and after some minor adjustments (I think improvements since I love to make stuff from scratch) I thought I would share with you! Here’s to the last 10 days of summer! What is your favorite summer fruit that you will be sad to see “go”?

WATERMELON WAFFLES

INGREDIENTS:

(makes 10  waffles)
Other: plates, syrup, forks, squirt bottle

    • 2 cups all-purpose flour
    • 1 teaspoon salt
    • 4 teaspoons baking powder
    • 2 tablespoons white sugar
    • 2 eggs
    • 1 1/2 cups milk
    • 1/3 cup butter, melted
    • 1 teaspoon vanilla extract
    • 1 cup mini chocolate chips
    • red + green food coloring + waffle iron
DIRECTIONS:  

Preheat the waffle iron to the desired temperature.

In a large bowl, mix together the flour, salt, baking powder and sugar; set aside.

    • In a separate bowl, whisk the eggs. Stir in the milk, butter and vanilla. Pour the milk mixture into the flour mixture; beat until well blended.
    • Pour about 1/3 of the batter into another bowl and add some green food coloring. Pour the green batter into a clean squirt bottle (like an old, but clean ketchup bottle.) Add red or pink food coloring to the remaining 2/3 of the batter and mix.
    • Start by pouring the red colored batter in the middle of the waffle iron. Then sprinkle some chocolate chips (watermelon seeds) onto the red batter (optional).
    • Next, “squirt” around the outside edge with the green batter. The colors should meet. Cook the waffles until golden and crisp. Once the waffles are done, cut them in half or quarters and you have a fun “slice of watermelon” waffle. You can add some more chocolate chips on top of the hot waffle if they have melted into the inside!
    • Enjoy with some syrup, whipped cream, or butter with a side of cold milk!
